Event features local, organic foods
 
ANDOVER TOWNSHIP — Locally grown and organic foods will be featured at the “Every Bite Counts” fund-raiser that will be held Sunday, Oct. 25, at 4 p.m. at Perona Farms.
Chefs from area restaurants based their recipes for the event on the fresh produce and meats available. The participating chefs are Tim Harder from The Dining Room in Sparta; Kirk Avondoglio, Perona Farms in Andover  Township; Andre deWaal, Andre’s Restaurant and Wine Boutique, Newton; Ryan Despersio, Fascino, Montclair; Kristi Becker, Cheddar Alley, Newton and Corey Heyer of Bernards Inn, Bernardsville.
The dinner will consist of five courses each prepared by a different chef and paired with complimenting wine.
Each course will include local, organic products that are being donated by Sussex and Warren county farmers in cooperation with The Foodshed Alliance in Blairstown.
The menu includes Cape May salt oysters and hors d’oeuvres prepared by DeWaal, followed by a soup prepared by Harder based on autumn squash from Donaldson Farms, of Hackettstown. Avondoglio will prepare Viking Village scallops from the Viking Village Seafood Company in South Jersey, and deWaal will make risotto using local organic vegetables by Godlewsky Farms of Great Meadows.
Despersio will prepare a duet of local organic lamb from Pittenger Farms of Andover. Becker will serve up a goat cheese sampler from Sal-Lee Farms of Bangor, Pa. For dessert, Heyer will prepare an apple tart with whipped caramel, brown butter powder and cranberry gastrique, using apples from Best Fruit Farms of Hackettstown.
 “The evening enables guests to enjoy the expert cooking styles of so many great chefs without having to travel all over New Jersey,” said  Tracey deWaal, co-owner of Andre’s Restaurant in Newton and co-chair of the event.  
Beverages featured during the evening include Ramstein wheat beer, Jermann Vinnae 2007, Bonchaine Chardonnay, Quinta do Crasto Donro Red 2007, Summers Cabernet Sauvignon, Bouvet Sparkling Rose, and Yalumba Tawney Port.
To lend ambiance to the evening, John Sheehan, a local guitarist will be playing original Finger Style Instrumental music including Classical Guitar and Renaissance Lute.
The fund-raiser will benefit Katie’s House, Inc., a group home in Newton for young adults with disabilities.

The executive director of Katie’s House, Evelyn Dudziec, has written a book that teaches parents of mentally challenged young adults what to do as they age as caregivers. The book will be available for purchase on Sunday.
